We would enjoy it with a freshly grilled swordfish steak topped with a roasted tomatillo and mango salsa. The grapes undergo 8 months of maceration in amphora or tn, "clay" in Arabic. As a result, this is a skin contact wine with tons of richness and flavor. Notes of ruby grapefruit, mango, honey, and sharp minerality best characterize the wine.
